The paper traps oils and fines, giving the cleanest, most articulate cup of any method — which makes it the natural home for delicate, complex, high-grown coffees whose florals and acidity you actually want to hear. Light roasts and washed African lots shine here; muddy, heavy coffees can feel thin.
