Cauca El Paraíso (Lot. Sake)

An anaerobic Geisha from Finca El Paraíso in Cauca, grown at 1,960 m, where Diego Samuel Bermúdez designs flavour using microbiology and thermodynamics rather than terroir alone. Picked right before overripeness to build sugar and aroma, then lactic-fermented for a clean, translucent cup, it lands in an unusual sake-like world: rounded ginjo-like aromatics with mandarin, plum wine and white peach over jasmine and green tea.
