Cauca El Paraíso (Lot. Sake)

This anaerobic Geisha comes from Finca El Paraíso in Piendamó, Cauca, Colombia, grown at 1,960 m under Diego Samuel Bermúdez, who applies microbiology and thermodynamics to design flavour. Harvested right before over-ripening to boost sugars and aroma, then taken through a lactic-focused fermentation, it stays clean while recalling the rounded perfume of Japanese sake.
