Small, mountainous and quality-obsessed, Costa Rica reinvented itself around the 'micromill' revolution, in which farmers process their own coffee instead of selling cherries to a central mill. That control made the country the spiritual home of honey processing, and the cup shows it: clean and bright with pronounced sweetness, ripe stone fruit and citrus over a honeyed, syrupy body. By law the country grows only Arabica, and it grows it carefully.
