This deeply sweet washed coffee comes from Finca Santa Rosa in the Chalatenango Mountains, run by Onyx's longtime friend Jorge Raul Rivera. Grape and rose lead the cup before it opens into a layered, complex profile that has made Santa Rosa a fixture in the lineup. It's a refined, floral-fruited El Salvador.
