This is a naturally processed Maragogype single lot from Finca Himalaya in El Salvador, grown by The Barn's longtime partner Mauricio Salaverria. Slowly dried, the lot is luscious and fruit-driven, with cherry and mango balanced by rich dark chocolate. Maragogype is one of Salaverria's standout varieties and a natural fit for this process.
