Silky Way is an anaerobic-washed Pink Bourbon from Las Flores in Acevedo, Colombia, grown at 1,750 m. It's a bright, expressive cup, with lemongrass and white florals over crisp green apple. The lot runs through an involved routine — 36 hours of anaerobic fermentation in cherry, a 12-hour oxidation, then another 36 hours of anaerobic fermentation after pulping.
