Lady in Red is an advanced anaerobic natural Pacamara from Finca Zarza, a three-generation Gasca family project in the mountains of Bruselas, Huila. The cherries undergo extended anaerobic fermentation, thermal conditioning and slow drying, giving a juicy, playful cup. Black cherry, strawberry candy and citrus make it extremely sweet, fruity and wild. Roasted light for filter by DAK in Amsterdam.
