Chinese coffee means Yunnan: red-earth hills around Pu'er and Baoshan better known for tea, planted since the 1890s and scaled up in the instant-coffee era on hardy Catimor. The last decade changed the story — a generation of young producers took over family farms, brought in careful picking and ambitious processing (long anaerobic naturals especially), and started proving Catimor's ceiling is far higher than its reputation. The new-wave cup is sweet and plush: plum, brown sugar, cocoa, gentle acidity, with experimental lots adding real perfume.
