This is an early picking of the Pacas cultivar from finca Nacimiento in El Salvador. The cup is quiet and restrained, with subtle fruity flavours leading into a finish of cacao. It's a lot that rewards attention rather than shouting for it. Roasted light for filter by Tim Wendelboe in Norway.
