94 Celcius was founded in 2017 by Marc-Alexandre Emond-Boisjoly, who trained in biochemistry and pharmacology before turning to coffee, and it roasts in Sainte-Julie, on Montreal's South Shore, on a Probat P12 with close probe and curve profiling. The name is the temperature many brewers aim for in filter coffee, and the house line is never bitter, always just. Its single lots come from producers it names and returns to, among them Wilton Benitez, Sebastián Ramírez, Diego Bermúdez and Pepe Jijón, with a strong line in co-fermented and experimental Colombian coffees beside washed Ethiopians and Central Americans. The coffees are sold in more than 250 shops and cafés across Quebec.
