Pacas is a spontaneous dwarf mutation of Bourbon discovered on the Pacas family farm in El Salvador in the late 1940s. Its compact stature allows dense planting and easier harvesting while retaining much of Bourbon's sweetness and balance. It thrives across Central America, notably in Honduras and El Salvador, and is one parent of the celebrated Pacamara. In the cup it offers rounded sweetness, gentle acidity, and a soft, approachable body.
