Maragogype is a natural mutation of Typica first identified near the town of Maragogipe in Bahia, Brazil, and is instantly recognizable for producing some of the largest coffee beans in existence. The plants are low-yielding and the oversized seeds make it uneconomical for many farmers, so it survives mostly in boutique lots across Central and South America. In the cup it tends toward a gentle, clean sweetness with soft acidity and a rounded body, and it responds well to natural and experimental processing that adds fruit intensity.
