Released in 2005 by Colombia's Cenicafé research institute, Castillo is Caturra crossed with the rust-resistant Timor Hybrid and then backcrossed for generations — leaf-rust protection wrapped around a Caturra-leaning cup. It saved countless farms through the rust crises and now covers much of Colombia's coffee land. Specialty snobbery once dismissed it; blind cuppings keep embarrassing that take, with clean caramel, red fruit and citrus at altitude.
