Tim Wendelboe won the World Barista Championship in 2004 and opened his Oslo espresso bar, training room and micro-roastery in 2007 — a small room in Grünerløkka that became, pound for pound, the most influential address in modern coffee roasting. The Nordic light-roast style the industry now takes for granted was substantially defined here: high-grown coffee roasted fast and bright, espresso treated as a way to taste terroir rather than toast. Wendelboe buys from a tight circle of producers he has worked with for decades — Kenyan factories and Colombian farms including Finca El Suelo, which he co-owns and farms — and roasts espresso and filter profiles as separate, distinctly named products, both of which appear in this index. Small, slow, and still the benchmark.
