'Heirloom' is less a variety than an admission of abundance. Ethiopia is the birthplace of Arabica, and its forests and gardens hold thousands of distinct local types, most never formally catalogued. Lumped together on a bag as 'heirloom', they share a tendency toward astonishing aromatic complexity — flowers, citrus, tea, and stone fruit layered in a single cup. Every cultivated variety in the world ultimately descends from this gene pool.
