Alo [Zero Fermentation Washed]

This is a washed Ethiopian heirloom lot from producer Tamiru Tadesse, built around an unusual idea: skip fermentation entirely. Ripe cherries are sorted, depulped and washed straight away, with no time spent in tanks, so the sugars and microbes that shape most modern washed coffees never get a chance to leave their mark.
