This Pink Bourbon comes from Wilton Benitez's celebrated Granja Paraiso 92 in Colombia's Valle del Cauca. A controlled washed fermentation pushes the aromatics while keeping the cup clean and precise, leading with a very expressive lavender note. It's a filter built around Benitez's experimental, meticulous approach to processing. Roasted light for filter by Tanat Coffee in France.
