Boo Coffee Roasters, also known as Boo Modern Coffee, is an independent specialty roastery in Anderlecht, Brussels, opened in 2024 by Benjamin Brassart and Benoit, who met working at the same Brussels café. Benjamin found specialty coffee in 2018 and worked his way from barista to head roaster; in 2025 he won the first SCA-sanctioned Belgian Roasting Championship, and in June 2026 the World Roasting Championship, the first Belgian to hold the title. Benoit came to coffee in Australian cafés and won the Belgian AeroPress Championship in 2024. Boo sources from a small network of producers and importers and sells seasonal single origins (Ethiopia, Uganda, Costa Rica, Colombia) beside its everyday Sunlight and Moonlight blends, each with a brew recipe.
