Found in the hills of Huila, Colombia, and named for its rosé-pink ripe cherries, Pink Bourbon spent years labelled as a chance cross of Red and Yellow Bourbon. Genetic work has since pointed somewhere more interesting: an Ethiopian-derived landrace, which is exactly what the cup says — perfumed florals, juicy citrus and stone fruit, a silky sweetness closer to a fine Gesha than to its namesake. It has become the signature variety of modern Colombian specialty.
