A washed heirloom from the Ayla Shantawene washing station in Sidamo, Ethiopia, cleaned of all its fruit before drying for a bright, clear cup. It opens with juicy pineapple and fragrant white peach, then finishes on a sweet, citrusy lime note reminiscent of a margarita. Vibrant acidity makes it refreshing and expressive.
