About this coffee
A white honey Red and Yellow Catuai from the Ramirez-Navarro farm in Tablón del Guarco, Los Santos, grown at 1,750 metres. Leaving some fruit mucilage on the bean during drying brings out apricot jam, mandarin and pear, rounded off with a touch of tonka bean. After the Los Campos lot won them over as a filter this season, Boo returned to see what the farm could do under pressure. Roasted light for espresso by Boo Coffee Roasters in Belgium.
