Elto [Elora Blood Yeast]

Part of the Elto Coffee project run by Eliyas Dukamo and Atiklit Dejene, this Elora Blood Yeast lot treats fermentation as a tool to express terroir rather than mask it. The heirloom cherries undergo a 72-hour natural anaerobic fermentation in sealed tanks with selected yeasts, chosen to shape the cup while keeping the coffee's identity intact.
