Even Coffee is a micro specialty roastery and café in Montreal, founded by Andrew Werbowyj. It describes a roastery as a network of relationships rather than a machine or a space: its work runs through partnerships with producers, exporters and importers, and the name stands for putting equal effort into every step from farm to roast. Roasts aim for clarity, sweetness and balance, with precision and consistency over excess. The menu is short and mostly Colombian and Ethiopian, each coffee titled by its producer or washing station (José Gomez, Franky Stiven Hoyos, Bookissa), alongside occasional 100 g collaboration releases such as Lost Origin's lots from Panama's Las Margaritas.
