This honey-processed heirloom lot comes from producer Tuke Yute in Keramo, Ethiopia, made with cherry flotation, anaerobic fermentation and shade drying. That meticulous work shows in a bright, layered cup of pineapple and green apple. Soft, tea-like tannins give it a white-tea finish.
