Prodigal Coffee

Prodigal is the roastery of Scott Rao and Mark Benedetto. Rao has spent three decades in coffee as a café owner, roaster, consultant and author; his books, The Coffee Roaster's Companion and Coffee Roasting: Best Practices among them, shaped how a generation of roasters talk about their craft. Benedetto is a trained chef and Q Grader who founded Last Stand Coffee in San Francisco in 2017 and has worked with Rao on his consulting and sample-roasting projects. The menu is short and high-end: washed and anaerobic Geishas from Colombia and Honduras, Cup of Excellence lots, and Ethiopian washed coffees from producers like Habtamu, each sold with its roast date, plus seasonal blends and green coffee for home roasters. A few lots return later as Freezer Reserve.
