Cauca Granja Paraiso 92 “Sudan Rume”

This is an anaerobic Sudan Rume from Granja Paraiso 92 in Cauca, Colombia, the family estate of Wilton Benitez, grown at 1,960 m. Benitez runs his own microbiology and quality labs: cherries are double-sterilised with ozonated water and UV, then fermented anaerobically for around 52 hours in a temperature-controlled bioreactor with Saccharomyces yeast. The cup is round and complex, with strawberry yogurt, plum and peach. Roasted light for filter by Glitch Coffee in Japan.
