ONA Coffee was founded in Canberra in 2008 by Saša Šestić, the Bosnian-Australian who went on to win the 2015 World Barista Championship with a carbonic-maceration Sudan Rume — a coffee, and a processing idea, that changed how the industry thinks about fermentation. That competition engine still drives the company: ONA's Project Origin sourcing arm works directly with producers on experimental processing, its baristas keep stacking national titles, and its carbonic maceration selections remain the reference coffees for the style. The retail lineup spans easy-drinking washed lots through to outright exotic fermentations, roasted in Canberra and shipped worldwide. In this index, ONA is the southern-hemisphere anchor — and usually where the strangest processing terms show up first.
