Founded in Copenhagen in 2007 by a trio of coffee professionals including 2006 World Barista Champion Klaus Thomsen, Coffee Collective is one of the earliest and most influential direct-trade roasteries in Europe. Long before transparency became a marketing word, they were publishing exactly what they paid farmers against the commodity price, and building producer relationships — like the Kieni factory in Nyeri, Kenya — that have run for well over a decade. The roasting style is classically Nordic: light, sweet, clarity first. The company still runs some of Copenhagen's defining cafés, from the original Jægersborggade shop to the roastery café on Godthåbsvej, and the lineup rewards drinkers who care where the money went as much as how the cup tastes.
