Cauca Granja Paraiso 92 is a pink bourbon from the family-run Granja Paraiso 92, where grower Wilton Benitez applies deep research into coffee microbiology. Here cherries are double-sanitized with ozonated water and UV, then fermented anaerobically with Saccharomyces yeast in a temperature-controlled bioreactor for roughly 52 hours. The result is bright and smooth, with pomegranate, blueberry and a pop of bubble gum. Roasted light for filter by Glitch Coffee in Japan.
