If Bourbon is one foundation of cultivated Arabica, Typica is the other — and the elder. It carried coffee from Yemen out into the world, through India and Java to the Caribbean and the Americas. Typica gives a clean, sweet, classic cup with a clear acidity, but it yields poorly and bruises easily under disease, so it has been steadily replaced by hardier descendants. Where it survives — old Sumatran and Latin American plantings — it is treasured for its refinement.
