Sey occupies a particular pedestal in American coffee: the Bushwick, Brooklyn roastery founded in 2017 by Tobin Polk and Lance Schnorenberg roasts about as light as commercial coffee gets, chasing total clarity — acidity, florals and origin character with zero roast flavour. The aesthetic is equally pared back: grey-on-white labels, a sunlit tasting room, and prose-heavy lot write-ups that read like wine notes. Sourcing is hyper-seasonal and uncompromising, favouring washed Ethiopians, Kenyans and top Central and South American micro-lots, often bought in quantities small enough to sell out in days.
