MAME was founded in Zurich in 2016 by Emi Fukahori, the 2018 World Brewers Cup champion, and Mathieu Theis, a Swiss barista champion; the name is the Japanese word for beans. It opened as a café in Kreis 5 and began roasting its own coffee in 2019, and now runs cafés in Zurich, Geneva and Tokyo. Competition is still the house culture: MAME coaches championship contenders, and its list has two tiers, a daily range of approachable single origins (many offered for both espresso and filter, or as omni roasts) and a competition range of tiny 60 g releases of the lots its baristas and brewers compete with.
