This is a washed Geisha from San Juan Sacatepéquez, grown at an average of 1,800 metres and fermented in barrels before drying. The Geisha plants grow tall and gangly with low output, so pickers make many passes to catch only ripe cherries, and the mill runs a dedicated line calibrated specifically for the variety to avoid damage during depulping.
