Doug Zell and Emily Mange started Intelligentsia in 1995, roasting in the back of a Chicago café, and grew it into one of the defining institutions of American third-wave coffee. The company pushed the industry toward direct trade — negotiated premiums paid straight to growers, buyers spending months a year at origin — and its competition program made it a dynasty: three consecutive US Barista Championships from 2008 to 2010, the last converting to a world title. The Black Cat espresso project became one of specialty coffee's most recognisable names. Peet's took a majority stake in 2015, but sourcing and roasting still run from Chicago. The web shop keeps a deep sold-out archive online; this index tracks the rotating live single origins, while Black Cat and the blends stay on the espresso bar.
