Bred in Portugal in 1959 from Caturra and the Timor Hybrid, Catimor was designed for one job — surviving leaf rust — and did it so well it became the backbone of coffee across Yunnan, Vietnam's highlands, India and beyond. Its reputation for a rough herbal edge comes mostly from low, hot plantings; grown carefully at altitude and processed with modern ambition (as China's new wave is proving), it turns out sweet, plush cups of brown sugar, cocoa and plum.
