Pilot began in May 2009 as Te Aro Roasted, a café and micro-roastery in a former car garage in Toronto's Leslieville, opened by Andy Wilkin, a newly qualified Q Grader, and Jessie Holmes, and named after the Wellington, New Zealand neighbourhood whose cafés inspired Wilkin. Supplying coffee, equipment and training to like-minded cafés turned it into a hub of the city's specialty scene. The name Pilot Coffee Roasters arrived in 2013, when roasting moved up the street to Wagstaff Drive. Today it runs cafés in Toronto, Oakville and Waterloo and sells to wholesale and grocery partners across Canada. The retail list pairs year-round blends with a handful of seasonal single origins in 300 g bags; this index follows the single origins.
