Square Mile was founded in East London in 2008 by James Hoffmann and Anette Moldvaer, both fresh off 2007 world titles — his in barista competition, hers in cup tasting — and became the roastery that taught a generation of UK cafés what specialty coffee was. Its Red Brick espresso and seasonal filter range formed the backbone of London's third wave, while Hoffmann went on to become coffee's most-watched educator, making the brand shorthand for rigorous, unpretentious quality. The buying favours sweetness and balance over shock value: washed Central Americans, Kenyans and Ethiopians, roasted in a modern style that is light but never austere.
