Subtext Coffee Roasters

Subtext is a team of coffee professionals roasting in one of Toronto's industrial hold-outs. It treats quality as a connection to agriculture, seasonality and micro-regions, and sets itself against the anonymous, commodity treatment of coffee: every bag carries the producer's name rather than a broad regional label, and each product page names the producer's town and the process. It publishes yearly transparency reports and names the importers it works with. Roasts aim for complexity, balance and origin character with no roast flavour, calibrated against blind tastings and checked with colour readings. The menu runs to Guatemalan, Mexican and Colombian producer lots, Kenyan AAs and Ethiopian washed coffees, with Reserve lots and a Rested range of older roast dates.
