Marshell is grown in pockets of northern Peru around Cajamarca and San Ignacio, and documentation is thin enough that any confident lineage claim deserves a raised eyebrow. What growers and the few roasters who buy it agree on: elongated beans and a perfumed, sweet, gently structured cup — florals over caramel with fine citrus acidity. April's washed lot from producer Ismael Sarango is one of the few in Europe; treat it as a chance to taste a variety still writing its own record.
