Ají is a variety grown in southern Colombia, particularly around Huila and Cauca, where producers value it for a clarity and aromatic intensity that recalls Ethiopian landraces. Its genetics remain debated, with many believing it descends from imported Ethiopian material that adapted to Colombian conditions. Cups tend toward pronounced florals, tropical fruit, and layered sweetness, which has made it a favorite for experimental and competition lots. Yields are modest, so it usually appears in small single-farm releases.
