Variedad Colombia was released by the national research center Cenicafé in 1982 as a Caturra crossed with the Timor Hybrid, bred to withstand coffee leaf rust. It was distributed widely across the country before Castillo largely superseded it, and many older farms still grow it. In the cup it leans toward comforting sweetness — chocolate, caramel and gentle red fruit — with a solid, dependable body. It remains an important part of Colombia's shift toward disease-resistant plantings.
